Spinach Potato Curry

I normally have a plan as to what I am going to cook for the blog, but this dish happened all of a sudden. I called my mom and told her that I was going to make something different with spinach and potato since the event is going to end next week. She then mentioned how she made this curry when she visited us and how I loved it. Then, the lightbulb goes on for me and I happily thanked her for reminding me. Another bonus was that this dish is very easy compared to the other one that I had planned on making. Apart from being easy this is a healthy dish and a treat for spinach lovers.

This curry does not use any dal and it was a welcome change when most of my day to day dishes use dal. The key is to use enough chilly powder/sambar powder as otherwise this curry will be very bland. So let’s get ready to cook spinach.

Spinach Garlic Rice
Spinach Pesto

Spinach Poriyal
Spinach Kootu

2 tsp oil
1 medium onion (1 cup chopped)
1/2 medium tomato
2 garlic cloves crushed
2.5 cups frozen spinach
2 small potatoes mashed
2-3 tsp sambar powder (Use c hilly powder and coriander powder instead)
A pinch of turmeric

Heat oil and add the onions.

Saute until onions are done.

Add the tomatoes.

Add garlic.

Add spinach.

Add the mashed potato.

Add salt, sambar powder, turmeric and 1.5 cups water.

Mix well. Allow to cook.

Spinach is cooked and see how it all comes together.

Healthy and tasty spinach potato curry ready. We had it along with onion-garlic kuzhambu and rasam.
