Cucumber Kootu (Cucumber Lentil Gravy)

This is a simple lentil based gravy with cucumbers. It uses a spice-mix that can be prepared in bulk and kept it air tight containers. This spice mix makes the preparation of this gravy a breeze since there is no grinding involved and the curry is ready quickly. Any vegetable like cabbage, carrot, beans, etc. can be used to make this gravy. Off to the recipe.

Cook the dal and keep aside.
Heat oil and splutter mustard seeds. Add cucumber, salt, asafoetida and a cup of water. When the cucumber is cooked add the cooked dal and kootu podi.
Simmer for 10 minutes and turn off the stove. Serve with rice or rotis.
