Day 4 of blogging marathon and I am loving the soups and salads. They are easy to put together and healthy too. The lentils in the soup added the needed volume and the tomato gave it some tanginess. I did not add cream or milk, but the soup was rich thanks to the lentils. The quantities of ginger and garlic can be varied to taste. Perfect for the days you are craving for something quick and light.
Carrots are rich in vitamin A and this is an easy way to include it in the diet. We had the soup with some homemade bread croutons which I will post soon. Happy Diwali friends. Off to the recipe.
Cook the carrots, tomato and moong dal. I used a pressure cooker.
Cooked and ready. Remove the skin of the tomato.
Blend the onion, garlic and ginger along with the cooked veggies and dal.
Take the blended mix in the same vessel used to saute onions and simmer for few minutes. Do not boil.
Add pepper and salt to taste.
Healthy and tasty soup ready. Moong dal added richness to the soup and we loved it.
