Chocolate Fudge (Burfi) | Cooks JoyI had bought this pack of milk powder ages back with the thought of making palkova, but never got around to it. So, while looking for recipes I came across this fudge from Jeyashri’s blog. It looked easy to make and I was glad to use up the packets. Chocolate Fudge (Burfi) | Cooks JoySince I do not have a proper picture of single-thread consistency, I decided to click the same except that I completely forgot that I was dealing with sugar syrup and was taking my own sweet time to click the picture. After 5 minutes of taking the picture in different angles, I realized that the sugar syrup had moved on to the two-thread consistency. Even though I had to make it again from scratch, I still enjoyed the whole experience because I had good pictures of the sugar syrup consistencies and I do not have to click those again :) .

The dessert was on the sweeter side and if you have sweet tooth, do not miss this dessert. Wishing everyone a happy and safe Diwali. Off to the recipe adapted slightly from here.

Chocolate Fudge

Diwali dessert made using milk powder and cocoa.

Ingredients:

Instructions:

Bring sugar and water to a boil and turn off the stove when single-thread consistency is reached. Immediately, add the milk powder, cocoa powder and ghee. Mix well and pour into a greased pan and spread with a spatula.

Add the nuts on top and press lightly. Allow to cool for a few minutes and mark the pieces. Once it cools further break the pieces apart.

My Notes
1. Consistency of the sugar syrup is important. Check every few seconds if you are a beginner.
2. Grease the pan and chop the nuts in advance. You have to pour the mixture into the pan and press the nuts in as soon as the mixing is done.
3. Note that this fudge is on the sweeter side.

1. Chop the cashews and almonds and keep aside. Grease a pan or plate with ghee and keep aside.2. Take sugar and water in a vessel.3. Bring to a boil and keep testing the sugar syrup for single-thread consistency.4. When you take a drop of sugar syrup between your thumb and forefinger, a single string should form. This is how it looks. Turn off the stove.5. Immediately, add the milk powder, cocoa powder and ghee.6. Mix well.7. Pour into the greased pan or plate and flatten with a spatula.8. Sprinkle the chopped nuts over it and press them lightly.9. After 5 minutes, cut into slices and allow to cool further.10. After 15 minutes, break the pieces apart. Burfi ready to be eaten.
