Snicker Bar Cookies (Peanut Butter Cookies)

Peanut butter cookies just got better. While chit chatting with my friend Rachel she casually mentioned these snicker bar cookies that her family loves. She was also kind enough to print out the recipe for me and also answered the silly doubts that I had. The recipe said it makes two dozen and when I started making it felt as if it went on forever and I ended up with almost 44 cookies. The size looked perfect to me and I was very confused, but then confirmed with my friend that the recipe indeed made a ton.
After some prying through the huge bag of candies, the kids found enough fun size snickers for the cookies. The original recipe called for mini snickers, but I just went with what I had. The caramel and chocolate in the middle filled the peanut butter cookies perfectly and it is really a brilliant idea. Perhaps I should try stuffing it with kisses chocolate rather than placing them on top as I did here. Either way it is a delightful treat for this festival season. Peanut butter cookies filled with snicker bar candy.
Cream the sugars and butter. Add eggs and vanilla and mix; next add the dry ingredients and mix to form a dough.
Make small balls of the dough; flatten each ball and place half a snicker candy in the middle and bring the dough together to wrap the candy.
If you like a glossy finish roll the dough ball in sugar. Place about 2 inches apart on an ungreased cookie sheet and bake in a 350F preheated oven for 12 - 18 minutes until the cookies are done. Cool on wire racks.
They will be brittle, but will harden on cooling.
