Fresh Tomato Salsa

During a casual conversation with my friend Rachel, she mentioned that she was going to finish up some of her tomatoes by making salsa. I got the recipe from her and tried it immediately. Well, I had to finish up the abundant tomatoes from the garden and this was an easy way. There are a couple of extra steps compared to the usual way I make it, but it is totally worth it. She also sent me a bottle of the salsa she made in the cute jar. I had to fill it up with my salsa and click because the bottle looked cute.

Salsa with fresh tomatoes and more. Perfect for chips or over burritos.
Blanch the tomatoes, remove skin and chop coarsely. Allow to rest for 30 min to an hour.
Chop onion, bell peppers, jalapeno, cilantro and garlic in a food processor. Add the drained tomatoes and salt to the vegetables and process until required consistency is obtained.
Store in refrigerator.
2. Then drop them in cold water.
3. The skin will slide off easily. Remove the skin from all tomatoes.
4. Coarsely chop the tomatoes and allow them to rest for 30 min to an hour. This will help remove some of the juice or else you will end up with a watery salsa.
5. Meanwhile take onion, bell pepper, jalapeno, cilantro and garlic in a food processor.
6. Chop them finely. You can also use a knife to chop.
7. Drain the tomatoes and add to the other vegetables in the food processor. Add salt and blend to required consistency.
8. Out of the food processor. Ready for chips.
