Peanut Butter Cookies

This cookie holds a special place because I began baking with these cookies almost 9 years ago. Having had no prior experience with the hand mixer nor with baking I was truly overwhelmed to start off with. A new country and a new kitchen with unknown kitchen appliances added to my fear. Thankfully I had my friend and her sister help me out with these cookies the first time. I was watching patiently as they made the dough and I was seriously surprised to see how the cookies flattened out after baking :) . Yeah, so much was my knowledge at that time.
After that I have been baking off and on, but since I consider these cookies to be a sinful delight I hardly made them. It made its entry now because I had a request for this from a friend and I also found out that my son loves these cookies. He thoroughly enjoyed them to a point that he claims he is bored with it now and I am not sure how true that is !!.
I made a couple of modifications to the original recipe which my friend gave. I have used butter instead of shortening and 2 egg whites instead of one whole egg. The cookies were extremely delicious and it flew out in a couple of days. Off to the recipe.


Ingredients
1/2 cup butter or shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 egg whites or 1 whole egg
1 1/4 cups all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Notes
1. If you have shortening, use that instead of butter. Although there is no change in taste, butter tends to flatten out the cookies a bit.

Method
Take peanut butter, granulated sugar, brown sugar and butter in a bowl.

Add egg whites.

Beat until fluffy.

Sift the flour and combine with baking soda, baking powder and salt.

Add the dry ingredients to the butter-sugar mixture.

Mix well to form a nice dough. Cover the dough and refrigerate for 3 hours.

After 3 hours make small balls with the dough.

Roll the balls over granulated sugar. This gives a nice shiny layer to the cookies.

Place 2 inches apart in an ungreased cookie sheet. Bake at 375F for 10 minutes until the bottom turns golden brown.

Out of the oven. They will be very brittle now. Place the kisses chocolate immediately so they stick to the cookie.

The cookies harden on cooling. The kisses chocolate melts initially and then hardens.

Tasty and addictive cookies ready. We loved it and our friends did too.
