Sprouted Lentil Sundal with Onions

Back to Navaratri after the Diwali snack yesterday. Sundal is basically a salad made with beans or lentils and is seasoned with Indian spices. This is another variation of sundal using onions and ginger. In my house we had no restrictions to using onions on festival days, but feel free to omit if needed. I have used the lentils bought from Walmart and they took a while longer to sprout compared to the moong.
The onions and ginger transformed the bland lentil into a tasty dish and we loved it. This was my first time making sundal with sprouted lentils and it is going to be on the menu often. I am all for munching on healthy stuff rather than chips. Off to the recipe and happy Vijayadashami friends.

Ingredients
2 cups sprouted lentils
1 tsp oil
1/4 tsp mustard seeds
1 tsp urad dal
1 small onion (About 1/2 cup chopped)
1 green chilly sliced
Small piece of ginger grated or minced
1 tsp coconut

Method
Prepare lentil sprouts similar to moong sprouts. Take in a vessel and pressure cook for 3 whistles. (About 10-15 minutes.)

Pressure cooked lentils.

Heat oil and add mustard seeds. When they pop add urad dal.

When the urad dal becomes golden brown add the onions and green chillies.

Add ginger. I used the microplane grater to grate the ginger.

Mix well and saute until the onions are done.

Add the cooked lentils.

Add salt.

Add coconut. Mix well.

Healthy and tasty sundal ready. It was a perfect evening snack for us.
