Uppu Seedai – Krishna Jayanthi Recipes

Ingredients
1.5 cups raw rice for making rice flour
2 tbsp urad dal flour
1/2 tsp sesame seeds
2 tbsp butter
Salt to taste
1/4 tsp asafoetida
Notes
1. The rolled balls need to dry out. Moisture in the balls will cause them to burst.
2. Do not put too much pressure rolling the balls. Just few seconds will do. Don’t worry about the shape.
3. Impurities in flour can cause bursting. So sieve the rice flour and urad flour a couple of times, be it homemade or store bought.
4. Dry roast the flour to remove moisture as that can cause it to burst.
5. To start with always drop few balls and stay as far away as possible.
6. If using store bought flours, sieve well and roast and proceed with the recipe.

Method – Seedai
Take rice flour in a bowl.
Add urad dal flour to the rice flour.
Add asafoetida.
Add sesame seeds.
Add salt.
Add butter.
Crumble the mixture together.
Using little water form a stiff dough. (Add water little by little.)
Pinch the dough and roll into small balls using the palm of your hands. Don’t put too much pressure on the balls. Just few seconds is enough. Let the balls dry out for an hour. This is very important. Moisture will cause them to burst.

Munching time. The beautiful addictive balls melt in your mouth and before you know you would have gobbled up an entire plate. Ok that was just me
