Fajitas with Grilled Vegetables

Ingredients
2 cups mushrooms (about 5 oz)
1 green bell pepper
1/2 red bell pepper
1 medium onion (1/2 big onion)
1 zucchini
Corn tortilla
Salsa
Salt
Pepper
Sour cream (Optional)
Cheese (Optional)
Tips
1. Avocado slices or guacamole can be added.
2. Tomatoes and salsa can be added.
Method
You can saute or grill the vegetables. Any choice of vegetable can be used. I have used green bell pepper, red bell pepper, zucchini, onion and mushrooms. Love the grill marks on the vegetables.
Toast the tortillas in a skillet or grill.
Start assembling. I have used corn tortillas. Place the grilled vegetables in the tortilla. Add salsa, salt and pepper.
Add sour cream and cheese if needed. This is totally optional.
