Maintaining sourdough starter is not hard, but finding recipes that use it seems to be the hard part. When I came across this pancake recipe I was really thrilled because now I can use the starter to make pancakes and kids seem to be more interested in pancakes than with bread. This is also very easy to put together and you can customize it with toppings of choice. The pancakes were soft and moist and the kids enjoyed it. Off to the recipe. Strawberry Banana Sourdough Pancakes
Strawberry Banana Sourdough Pancakes.
Ingredients:
- sourdough starter - 1 cup (fresh)
- sugar - 1 tbsp
- eggs - 1
- oil - 1 tbsp
- strawberries - handful - chopped
- banana - 1/4 cup - mashed
- salt - 1/4 tsp
- milk - 1 - 2 tbsp (optional - as needed to thin the batter)
- baking soda - 1/2 tsp
- butter - to fry
Instructions:
Mix all ingredients except milk, baking soda and butter. If the mixture is too thick, use milk to thin it down to pancake batter consistency.
When you are ready to make pancakes add the baking soda and mix well. Grease a skillet with butter and pour a ladle of batter. When bubbles appear all over the surface, flip over.
When both sides are cooked, remove and serve warm with maple syrup.
