I learnt to add potatoes to gravy dishes from my mom. Even a small cooked potato adds a lot of volume to the dish and brings it together. This is a simple gravy that goes well with rice or rotis. Off to the recipe.
Beans Potato Curry
Gravy with green beans and potato.
Ingredients:
- oil - 2 tsp
- onion - 3/4 cup - chopped
- ginger paste - 1 tsp
- tomatoes - 1 cup - diced
- beans - 2 1/2 cups - cut into 1 inch pieces
- salt - to taste
- sambar powder - 1 - 2 tsp
- turmeric - a pinch
- water - 1 1/4 cup
- potatoes - 2 cups - cooked and cubed potatoes
Instructions:
Heat oil. Add onions and ginger paste. Saute until onions are done. Add the rest of the ingredients except potatoes.
When beans are half cooked add the cooked potatoes. Simmer until the beans are cooked and the gravy comes together. Serve with rice or roti.
