Kootu is a lentil gravy and there are a lot of variations. Here, I have used kootu podi that simplifies the process a lot. I usually make the podi in bulk and store in air tight containers. Since this is a one-pot dish, it is perfect for the weeknight dinners. Kootu goes well with rasam rice, rotis, etc. Off to the recipe.

Bottle Gourd Lentil Gravy (Kootu).
Ingredients:
- oil - 1 tsp
- mustard seeds - 1/4 tsp
- red chillies - 2
- moong dal - 2 tbsp
- channa dal - 2 tbsp
- bottle gourd - 2 cups - diced
- kootu podi - 1 tsp
Kootu podi can be made following this link
- turmeric - a pinch
- water - 1 - 2 cups
- salt - to taste
Instructions:
Heat oil and splutter mustard seeds. Add red chillies and the rest of the ingredients. Cook for 3 - 4 whistles.
Serve with rice or roti.
If not using a pressure cooker, it takes time for the lentils to cook.
