This is a healthy dish that I love to have for breakfast. During my last trip home I bought the puttu maker and finally got around to using it. The puttu maker I have is basically a vessel with a cylindrical part on top. The base holds water that boils and steams the mix in the cylindrical portion. You can also steam the crumbly flour in the pressure cooker if you do not have a puttu maker. I have used minimal amount of coconut, but the puttu is usually made with lots of coconut. So, adjust to taste. Off to the recipe.
Ragi Puttu
Healthy dish with ragi flour.
Ingredients:
- ragi flour - 1 cup
- salt - a pinch
- water - as needed (warm water)
- coconut - few tbsp (adjust to taste)
Instructions:
Take flour and salt. Sprinkle water and keep mixing.
Hold some flour tightly. It should form a shape, but will crumble down when broken apart. At this point stop adding water and allow the flour to rest for 10 minutes.
Fill a puttu maker with half the flour and top with coconut. Add the remaining flour and top with remaining coconut. Steam for about 10 - 12 minutes.
When the puttu maker is cool enough to handle, carefully remove the puttu and serve.
1. You can serve with kuruma or just sprinkle sugar and serve.
2. If you do not have a puttu maker, use a pressure cooker to steam the flour mixture.
