I rarely make pesto with basil since I do not get fresh basil easily, but it is one of my favorite pesto. We usually spread it on bread or toss with pasta. You can use any vegetable of choice or just toss the pasta with pesto alone. The pesto makes the pasta very creamy and rich and my kids love it. You can make pesto with cilantro, spinach, broccoli, etc. Off to the recipe.
Basil Pesto Pasta with Vegetables

Pasta tossed with basil pesto and vegetables.
Ingredients:
- pasta - about 6 servings
- olive oil - 1 tbsp
- cumin seeds - 1/2 tsp
- garlic - 3 cloves
- tomatoes - about 15 cherry tomatoes
- bell pepper - about 2 1/2 cups - diced (I used red, green and yellow colored peppers)
- salt - as needed
- basil pesto - as needed
- parsley - to garnish
Instructions:
Cook pasta according to package instructions. Pesto can be prepared following this link.
Heat oil and add cumin seeds and garlic. Next add tomatoes and saute for a minute. Add the peppers and salt. Cook until the peppers soften.
Toss with pasta and pesto. Garnish with parsley.
