I hardly buy butter lettuce and when it was part of the bountiful basket that I buy off and on, I wanted to make something simple and interesting with it. This salad caught my eyes since it had some of my favorite ingredients like avocado and marinated onions. The crisp butter lettuce combined with the creaminess of the avocado made this salad a simple, light and tasty one. Recipe from here.
Healthy salad with lettuce and avocado.
- lettuce - 2 cups (Butter lettuce torn into pieces)
- avocado - 1 - sliced
- For Marinade
- onion - 1 cup - thinly sliced
- salt - to taste
- pepper - to taste
- lemon juice - 1 1/2 tbsp
- olive oil - 1 tbsp
Combine ingredients for marinade and let sit for 10 - 15 minutes. Add avocado and lettuce and toss gently.
