Sambar is basically a lentil stew and there are a ton of variations using various lentils. The most common one uses toor dal that has to be cooked in a pressure cooker and also takes a longer time to cook. When you do not have much time on weeknights, you can use other lentils like moong dal that cooks very fast. This one pot sambar makes a tasty side for idli, pongal, etc. and it is also very easy to make. I have used carrots, but you can add vegetables of your choice. Off to the recipe.

Take all ingredients for sambar except cilantro in a vessel. Pressure cook for however long you normally cook the dal.
