Blogging has introduced me to a number of people in the virtual world. This pink rice is to celebrate the birthday of a friend who was introduced to me a few months ago. She blogs here and is very creative with her blog changes and so on. Happy birthday dear .
Coming to the recipe, bored with the usual stir fry and kootu with beetroot, I decided to make this rice instead. This is a simple rice flavored with spices. Kootu podi (mixture of lentils and spices) is used to jazz up this rice and I normally make the powder in bulk and add it to a variety of dishes. This is also similar to the capsicum rice already posted. Off to the recipe.
Rice with beetroot and roasted spices.
- basmati rice - 11/2 cups
- oil - 2 tsp
- mustard seeds - 1/4 tsp
- urad dal - 1 tsp
- channa dal - 1 tsp
- red chillies - 2
- beetroot - 4 cups - shredded
- salt - to taste
- chilly powder - 1/4 tsp
- kootu podi - 4 - 5 tsp

- coconut - 2 tsp
Cook basmati rice and keep aside to cool. The ratio of rice:water I use is 1:2.
Heat oil and splutter mustard sees. Add urad dal, channa dal and red chillies; when the dals turn golden brown add the beetroot, salt and chilly powder.
When beetroot is cooked add coconut and kootu podi. Mix gently and serve with raita, chips or papad.
Allow the rice to cool before mixing or else it will become mushy.
