With the kids having summer vacation, things are pretty crazy at home. Simple salads and quick fix dinners are my life savers at the moment. I would have never thought of combining cucumber and pineapples until K came home with the English cucumber. I am not sure why it is called so, but it is the long slender variety with very small seeds and is normally wrapped in plastic wrap and is unwaxed.
Does it surprise anyone that it was the first time English cucumber made its way to our house? Anyway, a pineapple also accompanied it and the salad was put together. There was crunchiness from the cucumber, sweetness from the pineapple and mild heat from the chilly powder. It was a perfect side to a meal and tasted great. You can certainly use regular cucumber for this too. Off to the recipe.
Salad with cucumber and pineapple.
- cucumber - 2 cups - diced (I used the English cucumber)
- pineapple - 1 cup - diced
- cilantro - 2 tbsp
- onion - 1 tbsp - chopped
- salt - to taste
- chilly powder - a pinch (use jalapeno instead if needed)
- lemon juice - 2 tsp
Toss all the ingredients together. Serve chilled.
