These muffins are so good and I have made them twice already. It all started because greek yogurt was on sale in the local grocery store and due to my new found love for tzatziki dip, I decided to buy a huge box of the greek yogurt so I have some on hand always rather than straining regular yogurt. The only thing I forgot was that the store bought yogurt was pasty in my opinion and I have been making yogurt at home since.
So, I made the tzatziki dip only to find that it was pasty and the texture was not in my favor. I decided to disguise the greek yogurt in dishes and started looking for recipes that use a lot of greek yogurt . To my luck, I found this yummy savory muffin recipe that was a total hit at home with adults and kids.
I think I will be buying store bought greek yogurt just to make these muffins from now on. If you love pickled jalapenos, you have to try these muffins. They taste so good. Off to the recipe. Recipe adapted from here.
Spicy Jalapeno-Cheese Muffins
Spicy muffins with greek yogurt, jalapeno and cheese that is easy to make.
Ingredients:
- self rising flour - 1 cup - refer to notes
- greek yogurt - 3/4 cup - refer to notes
- cheddar cheese - 1/2 cup
- parmesan cheese - 1/2 cup
- onions - 1/4 cup
- jalapeno - 1/4 cup - pickled variety - chopped
- cumin seeds - 1 tsp (jeeragam)
- egg whites - 2
- milk - 1/2 cup - fat free
Instructions:
1. Take self rising flour and greek yogurt in a bowl.
2. Add cheddar cheese, parmesan cheese, onions, jalapeno and cumin seeds.
3. Add egg whites and milk. Mix together with a spoon.
4. Grease a mini muffin pan and fill it nearly full with batter.
5. Bake in a preheated 400F oven for 20 - 25 minutes until the tops are golden brown.
6. Serve warm.
My Notes
1. Self rising flour substitute: 1 cup regular flour + 1.5 tsp baking powder + 1/4 tsp salt.
2. To make greek yogurt at home, take regular yogurt and place in a muslin cloth over a colander and let it drip overnight in the fridge. I have the pictorial here. For 1 cup greek yogurt I used 4 cups fat free yogurt.

Hello I was wondering how long would these stay good? I was thinking of making them for my boyfriend in Afghanistan but its about a 9 days to ship it there. would they survive that long?
