Mocha-Chocolate Shortbread

This shortbread was something that popped out all of a sudden this weekend. My son had his scouts awards program and we had to make dessert. This whole week K was brainstorming on what I could make and he suggested making a pie and some cookies. But for some reason pie seemed to be the most uninteresting thing for me this weekend and I wanted to make something that I had not baked before.
So the search continued and I narrowed it down to this shortbread since I had all the ingredients on hand and it is very very easy to make. I used half the amount of instant coffee and we all loved the shortbread. I made two batches one using the 9 inch pan and the other using the pie plate. I cut squares from one and diamonds from the other. Recipe slightly modified from MyRecipes.

1 1/4 cups all purpose flour
1/2 cup powdered sugar
1 tsp instant coffee (I used Bru instant coffee)
2/3 cup butter softened
1/2 tsp vanilla extract
2 cups semi-sweet chocolate morsels

Yields : 16 – 20 squares

Take all purpose flour in a bowl.

Add powdered sugar.

Add instant coffee.

Mix to combine.

Add softened butter.

Add vanilla extract.

Beat on low speed until blended.

Add 1 cup chocolate chips.

Mix gently to combine.

Take the dough in an ungreased  9-inch square pan and press down with fingers to flatten.

Prick with a fork and bake in a 325F preheated oven for 20 – 30 minutes until the top is lightly browned. I had to keep it for 30 minutes.

Out of the oven. It does not look very different than the way it went in :) .

Pour the remaining 1 cup chocolate chips on top and allow to melt. I kept it back in the oven for a few minutes to help the chocolate to melt.

When the chocolate chips have melted, spread to form a layer.

Cut into squares and allow the chocolate to set before removing from the pan. I left the pan for a couple of hours and then removed the pieces.

Delicious and tasty shortbread. Serve as is or with ice cream.
