Spooky Witch Fingers for Halloween (Buttery and Sweet)

Yep, I am a little late in posting this. I was totally caught up with Diwali and other events that this one slipped my mind. Finally, I made it today and thoroughly enjoyed it. Even my 3 yr old was giggling looking at these and she made teeny tiny ones. Next time I make it I will probably add some food coloring to make the nails look more real and of course make the cookies thinner as they seem to expand a lot. Oh well, let us just assume that my witch has fat fingers for now :) .
As always, I was racing against time to get these done before darkness sets in and I was only partially successful, thanks to the fact that it gets dark by 5:30pm. So the final pictures were taken with very low lighting. These cookies are buttery and sweet and I am sure kids would love them. They look quite real and perfect for Halloween. Now off to the recipe.


Ingredients
1 cup butter
1 cup sugar
2 egg whites
1 tsp vanilla extract
2 3/4 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
30 – 40 almonds skin removed

Yields
About 30 fingers

Notes
1. The fingers expand, so make them thinner.
2. Recipe can be halved.

Method
Soak the almonds in hot water for 30 minutes and peel the skin off.

Sift the flour.

Add baking powder.

Add salt.

Whisk it all together.

Take butter, sugar, eggs and vanilla extract.

Beat until well mixed.

Add the dry ingredients a little at a time and mix well.

All the flour mix has been incorporated.

Get it all together forming a small ball. Cover the dough and refrigerate for 30 minutes.

After 30 minutes, pinch a small portion of dough and form a ball.

Roll into a small log. Just roll between your palms.

Press gently with a fork forming marks. Insert an almond for the nail.

Place all the fingers in a baking sheet and bake in a 325F preheated oven for 15-20 minutes until the base gets light brown. Don’t they look cute ??? :)

Out of the oven. OK. My witch has fat fingers :) .
