This is a simple fry with seppankizhangu(arbi) that goes well with rasam rice. As a picky eater, I was not fond of arbi as a kid. Things change and these days I seem to like this fry more than potatoes. Due to the lacking of Indian stores in my area, some vegetables become even more of a delicacy and arbi is surely one . You can add a sprinkle of pepper powder at the end to add more punch to the dish as well. Off to the recipe.
Seppankizhangu / Arbi Fry
Arbi coated with spices and roasted.
Ingredients:
- arbi - 10 small ones
- salt - to taste
- sambar powder - 2 tsp
- salt - to taste
- turmeric - a pinch
- oil - 1 tbsp
Instructions:
Boil arbi until tender. Peel and chop into pieces. Mix with rest of ingredients except oil.
Heat oil in a pan and add the arbi. Roast for about 10 - 15 minutes until the arbi is crispy on the outside.
