Variety rice like lemon rice, tamarind rice, etc. are easy to make and perfect for weeknight meals. We certainly do not want to make anything elaborate after a tiring day. Nowadays even chapati and paratha have been pushed to weekends due to lack of time. This is one more to the variety rice collection and if you love peanuts, you have to try this rice. Sesame seeds add a nice flavor to the rice and you can enjoy the rice as is or with a side of chips. Off to the recipe.
Peanut Rice
Flavorful rice with peanuts and spices.
Ingredients:
- peanuts - 1 cup - roasted and skin removed
- oil - 1 tsp
- red chillies - 6 - 8
- coconut - 2 tbsp
- sesame seeds - 2 tsp
- salt - to taste
- basmati rice - 1 1/2 cups
- For Seasoning
- oil - 1 tbsp
- urad dal - 2 tsp
- channa dal - 2 tsp
- curry leaves - few
- turmeric - a pinch
- asafoetida - a bit
Instructions:
Cook rice and allow to cool. I use 3 cups water for 1.5 cups of basmati rice.
Roast peanuts and remove the skin. Allow to cool and blend to a coarse powder.
Heat oil and roast red chillies and coconut. Allow to cool and grind. Also, roast sesame seeds and add to the chilly-coconut mixture and blend again.
Seasoning: Heat oil and add all the ingredients under seasoning and saute until the dals turn golden brown.
Add the peanut powder, chilly-sesame powder and the seasoning to the cooked and cooled rice and mix well. Serve with chips.
