I love making sprouts. There is something about seeing those lentils, grains, etc. sprouting. This time I was showing my 7 year old how to make sprouts and she started her own mini project with various lentils in bottles. She kept monitoring it daily and was jumping up and down when they started sprouting . This is a simple salad and can be customized to taste. Chaat masala adds a nice flavor and lemon juice gives the needed tanginess. The kids were drawn to the salad mainly for the lemon juice. Most of the ingredients are raw and they give the salad a nice crunch. Off to the recipe.
Healthy salad with moong sprouts.
- moong sprouts - 1 1/2 cups
- onion - 2 tbsp
- tomatoes - 2 tbsp
- cilantro - 1 tsp
- carrots - 2 tbsp
- salt - to taste
- chaat masala - to taste
- lemon juice - 1 tbsp (adjust to taste)
Steam moong sprouts for 10 minutes. Toss with rest of the ingredients and serve.
Sprouts store well in airtight containers in the fridge for a week or so.
