Vadai is a deep fried fritter and is quite addictive. It is usually made with just channa dal, but here I have used soya beans as well. These beans were lying in the pantry for quite sometime and an easy way to finish them off would be to make deep fried snacks that are loved by kids and adults. You can also make a healthy version of this by using the kuzhi paniyaram pan as shown here. There are tons of variations and you can use any legume. Off to the recipe.
Soya Beans Vadai
Deep fried patties with beans, dal and more.

- fennel seeds - 1 tsp
- garlic - 4 cloves
- salt - to taste
- onion - 1 cup - chopped
- cilantro - 1/2 cup
- oil - to deep fry
Soak beans and dal for around 4 hours. Grind coarsely with chillies, fennel, garlic and salt. Mix in onion and cilantro.
Heat oil and form small patties of the mixture and drop gently in oil. Flip over and allow the other side to cook. When both sides are golden brown remove from oil and drain on paper towels. Serve warm.
