One thing I have learned over the years is that most vegetables, dals, etc. can be made more interesting by adding them to parathas. Sweet potato as the name says is “sweet” for my taste buds and the only way I could finish it off was by adding it to parathas. Hence these parathas were born.I have mentioned in the recipe to add water as needed little by little only. I learnt it the hard way. The watery mess took quite some adjustments and modifications to finally turn out the way I wanted. I also like the pretty color the sweet potatoes gave to the parathas. Overall a winner and we had the parathas with a simple onion-tomato curry. Off to the recipe.
Sweet Potato Paratha
Indian flat bread with mashed sweet potatoes.
Ingredients:
- sweet potatoes - 1 cup - puree (about 1 sweet potato boiled and pureed)
- whole wheat flour - 3 cups
- salt - to taste
- chilly powder - 1/2 tsp
- ajwain - 1/2 tsp
- water - as needed
- oil - as needed
Instructions:
Boil sweet potatoes and mash.
Mix all the ingredients except water and oil. Knead until you have a soft and pliable dough. Use water little by little as needed. Allow dough to rest for 30 minutes.
Divide dough into 12 pieces. Roll each into a circle. Fold over to form a semi-circle. Fold again to form a triangle. Roll again. (Refer to this post to see the step by step pictures for rolling).
Heat a griddle and place the rolled paratha. Flip over in a minute or two. Add a tsp of oil and flip over again in a minute or two. Add oil again if needed.
When both sides are cooked and browned the paratha is done. Serve with curry of choice.
