Clear Vegetable Soup

This is a simple and healthy vegetable soup that we used to have when we were kids. As mentioned in my old posts, this was the only soup known to me at that time. It is a neat way to get the goodness of veggies into kids.
Thinking about it now, it is pretty similar to the vegetable stock with subtle differences. This soup makes me very nostalgic as it has a ton of sweet memories associated with it. I use a pressure cooker since that was the way it was made at home. Throw in all ingredients and let the cooker do the work. You can also use a regular vessel and simmer until the vegetables are tender. You would probably have to simmer for a longer time to allow the flavors to seep into the soup. Off the recipe.

Healthy and simple vegetable soup.
Heat oil and add cloves, cinnamon and onion. When onions are cooked, add the rest of the ingredients. Cover and cook until the vegetables are done. (I used a pressure cooker and cooked for 2 to 3 whistles).

4. Clear soup ready.
