In our last week’s bounty basket we got a few English cucumbers. These are the long variety with tiny seeds. This simple cucumber sandwich is a perfect teatime snack and the usual sandwiches have a spread of butter and topped with these beauties. Since avocados were on hand, I decided to replace butter with avocado and totally loved the creamy melt in the mouth texture that it gave to the sandwich. Of course, feel free to use butter, mayo, etc. I am sure that would taste divine too.:). We used a mandolin slicer to slice the cucumbers into really thin slices. This sandwich made me scream for summer because of the fresh ingredients. Off to the recipe.
Avocado Cucumber Sandwich
Healthy sandwich with avocado and cucumbers.
Ingredients:
- bread - few slices
- avocado - 1
- cucumber - 1/2 - cut into thin slices (I used an English cucumber)
- salt - to taste
- pepper - to taste
Instructions:
Mash the avocado. Slice the edges of the bread.
Spread avocado on the bread. Place cucumber slices and sprinkle salt and pepper. Place another slice of bread on top.
Slice and serve.
