Rava Khichdi (Sooji / Semolina Khichadi)

Hope everyone is having a wonderful weekend. This is a simple breakfast food that takes very less time to prepare. Since rava/sooji cooks very fast it is normally made when unexpected guests arrive. There is an even more simpler version that I have posted here that does not use vegetables except for onion. I prefer this version because it is more on the watery side and is loaded with vegetables. Feel free to add veggies of choice and I sometimes even add garbanzo. Off to the recipe.

Popular South Indian breakfast food.
Heat oil and add cloves and cinnamon; next add onion, ginger paste, and chilly. When onion is cooked add tomatoes, peas, carrots and turmeric. Saute for 5 minutes and add water and salt.
When water starts boiling add the rava stirring continuously. Close and cook until rava is done. Fluff it up and serve with chutney of choice.

5. Add rava stirring continuously.
6. Close and cook until the rava is cooked. It takes less than 10 minutes for the rava to cook.
7. Fluff it up and serve with chutney of choice.
