This is a healthy gravy with tofu and spinach. Palak paneer is a popular North Indian dish and this gravy is inspired by the same. Paneer is an Indian cheese and I have replaced it with tofu. I also decided to keep it healthy by skipping the half and half/cream. Tofu is bland by itself and mingles with most gravies and this one is no exception. Since we like the tofu to be slightly crispy on the outside I have baked it. You can also fry it on the stove top in a non stick pan. You can use this as a side to rice or with the Indian flat bread. Off to the recipe.
Palak Tofu

Spinach tofu gravy.
Ingredients:
- For Tofu
- tofu - 1 box - pressed and cubed
- yogurt - 1 tbsp
Homemade yogurt can be made following this link
- turmeric - a pinch
- chilly powder - 1/4 tsp
- salt - to taste
- kasturi methi - a pinch
- For Gravy
- oil - 2 tsp
- cumin seeds - 1/2 tsp
- onion - 3/4 cup - chopped
- ginger-garlic paste - 1 tsp
- green chilly - 3
- tomatoes - 1 cup (make a puree)
- coriander powder - 3 tsp
- cumin powder - 1 1/2 tsp
- turmeric - a pinch
- chilly powder - 1/2 tsp
- salt - to taste
- spinach - 1 - 9 oz packet fresh spinach (about 2 - 3 cups packed)
Instructions:
Boil or steam spinach; puree and keep aside.
Prepare the marinade for tofu; add the cubed tofu and allow to sit for 30 minutes. Bake in a 375F preheated oven for about 30 minutes turning once in the middle.
For gravy, heat oil and add cumin seeds. Add onions, green chillies and ginger-garlic paste; saute until onions are cooked. Next add tomato puree, coriander powder, cumin powder, turmeric, chilly powder and salt.
When the gravy thickens add the spinach puree and baked tofu. Simmer for a few minutes and turn off the stove. Serve with rice or roti.
1. Fresh spinach is preferred.
2. Tofu can also be pan fried.
