“Vadai” is a deep fried snack made with lentils or legumes. I had some extra sprouts sitting in the fridge and decided to use it for these vadais. This post explains how to make sprouts. If you are pressed for time you can make this recipe with just the soaked moong dal too. These make great party snack if you plan ahead of time and will be a favorite with both kids and adults. Vadai has a crunchy exterior and is soft on the inside. It is versatile and you can add ch0pped spinach, finely chopped cabbage and so on. Off to the recipe.
