Roasted Asparagus

Everyone in the family loves asparagus and I could not pass it up when it went on sale recently. I loaded the cart with about four pounds of asparagus and started thinking about the various things that can be made with it. A simple stir fry with Indian spices is the most welcomed dish and is a favorite with my kids too. That being said I did not want to do the same with four pounds
.
Then I suddenly recollected how my friends just roasted the asparagus in the oven during parties. In order to add more flavor I have used the herbed oil that was made for focaccia. The herbs added a ton of flavor and we had it along with some salad and noodles. Roasting brings out the sweetness in the vegetable and the edges were slightly crisp too. Overall it was a filling and healthy dinner. Never imagined that a dish so simple could be a star. Off to the recipe.

Simple roasted asparagus.
Mix the ingredients for herbed oil and keep aside for a few hours. (more the merrier). You could also use plain olive oil if needed.
Trim the asparagus and toss with herbed oil. Use as much as needed. Sprinkle with salt and pepper and bake in a preheated 400F oven for about 10 minutes. Then turn the heat down to 375F and bake for another 5 minuts until the asparagus is tender.
Serve as a side with pasta and so on.
2. Out of the oven. Serve as a side along with pasta and so on.
