This is a simple recipe that can be served for breakfast or for a light dinner. “Dosai” basically refers to a kind of crepe and there are tons of varieties based on ingredients. The one that is made usually at home is this type where the batter needs to ferment. Then, we have the instant ones like wheat dosai, rava dosai and so on where you mix in the ingredients and form the crepes right away. I love recipes like this where we do not have to think in advance and soak ingredients and so on. These crepes are best served warm with a chutney of choice. Off to the recipe.
Maida Dosai (All purpose flour Crepes)
Ingredients:
- all purpose flour - 1/4 cup
- rice flour - 1/4 cup
- rava - 1/4 cup
- onion - 1/4 cup - chopped
- green chilly - 1
- salt - to taste
- yogurt - 1 tbsp
Homemade yogurt can be made following this link
- water - 1 cup
- oil - as needed
Instructions:
Mix all ingredients except oil and form a batter. Heat a griddle and pour a ladle of batter on it; spread to form a circle.
Pour about 1/2 tsp to 1 tsp of oil around the edges and flip over in a couple of minutes. When both sides are cooked the dosai is done. Serve warm with chutney of choice.
