The family loves pasta. The kids love it so much that they might not mind having it daily. Now that is a guess since I have never fed the same thing even twice in a row. But I can feel it when I see their faces light up when it is pasta rather than the boring idli. Although for the most part we stick with tomato based pasta, I sometimes look up for different ways to make it interesting. This is one such recipe that I came across while looking for recipes to finish up the tomatillos in the fridge. I added my twists and twirls to it to finish up other ingredients and we had a filling and healthy dinner. Off to the recipe. Recipe adapted largely from here.
Tomatillo Pasta with Asparagus
Pasta with asparagus and tomatillo sauce.
Ingredients:
- For Sauce
- tomatillo - about 7 medium
- garlic - 5 cloves
- green chilly - 2
- spinach - 1 cup - fresh (packed)
- cilantro - 1 cup - packed (coriander leaves)
- olive oil - 1.5 tbsp
- salt - to taste
- pepper - to taste
- For Pasta
- olive oil - 1 tsp
- cumin seeds - 1/2 tsp (jeeragam)
- garlic - 6 cloves - minced
- asparagus - 2 cups - cut into pieces
- salt - to taste
- pasta - 4 servings
- pepper - to taste
Instructions:
Sprinkle tomatillo pieces with salt and bake in a 400F preheated oven for about 25 minutes. Saute garlic in half a tsp of oil. Allow to cool and take the tomatillo, garlic and remaining sauce ingredients in a blender and blend well.
Heat oil and add cumin seeds. Next add garlic and saute for a few seconds. Add asparagus and salt. Meanwhile cook pasta according to package instructions. When asparagus is cooked add the sauce and the cooked pasta.
Sprinkle with pepper and toss it together.
You can also roast the garlic along with tomatillo pieces.
