If you do not have a lot of time to prepare elaborate snacks, then you must add this to your list. It hardly takes minutes to make this snack and is sure to become your family’s favorite. Each bite is loaded with the goodness of peanuts, cashews and so on. The recipe makes a ton and it was all gone in a couple of days.
You can adjust the quantity of spices to your liking and I am kicking off Diwali with this quick and easy snack. Off to the recipe. Recipe adapted from Mallika Badrinath book.
Puffed rice mixed with nuts and spices.
Heat oil and splutter mustard seeds. Add garlic and curry leaves. Next add cashews, peanuts and pottukadalai giving a few seconds gap with each addition.
When the cashews turn golden brown add the spice powders and saute for a minute. Finally add the puffed rice and turn off the stove. Mix gently until the puffed rice gets coated with the spice mixture.
Allow to cool and store in airtight containers.
