Potato Puttu (Mashed Potato Curry)

Potatoes are so versatile and I am one happy gal even if there are just potatoes in the kitchen. There are so many dishes that can be made with it and it will never disappoint you. This is a curry with mashed potatoes and my mom normally makes this to go with a spicy kuzhambu. The dish not only goes well with rice, but also with Indian bread. It is pretty forgiving like most Indian dishes and you can make it more dry or watery according to need.

Mashed potato curry.
Boil potatoes, peel and coarsely mash.
Heat oil and splutter mustard seeds. Add urad dal and when it turns golden brown add onion, chillies, garlic and curry leaves.
When the onion is cooked add the mashed potatoes, salt, turmeric and water. Simmer until desired thickness is obtained and turn off the stove.

5. Saute until the onions are cooked.
6. Add mashed potatoes, salt and turmeric.
7. Add water and simmer until desired thickness is obtained.
8. Turn off the stove and enjoy with rice or roti.
