Kuruma is basically a gravy dish and often includes coconut and is served with rotis, dosai, idli and so on. Sometimes cashews are also added for the richness. While browsing through one of my cookbooks, I came across the recipe for peas kuruma. I decided to try the same with snow peas and soya chunks. This was a welcome change to the usual snow peas stir fry that I normally do and we had it with rotis. Recipe adapted from Chef Damu cookbook.
Snow Peas Soya Chunks Kuruma
Rich gravy with snow peas and soya chunks.
Ingredients:
- For Masala - 1
- cilantro - 1/2 cup (packed)
- garlic - 5 cloves
- green chilly - 4 - 5 (use more or less depending on how much heat is needed)
- coriander seeds - 2 tbsp
- For Masala - 2
- cashews - 10
- coconut - 2 tbsp
- For Kuruma
- oil - 1 tbsp
- cloves - 2
- cinnamon - small piece
- onion - 1.5 cups - chopped
- tomatoes - 1 cup - chopped
- snow peas - 1 3/4 - 2 cups
- soya chunks - 1 cup
- salt - to taste
- turmeric - a pinch
- yogurt - 1/2 cup

- cilantro - to garnish
Instructions:
Add soya chunks to boiling water and let it remain for a few minutes. Remove from hot water, wash and squeeze out the excess water. Keep aside.
Masala 1:
Fry the coriander seeds alone and let it cool. Grind with cilantro, garlic and green chilly and keep aside.
Masala 2:
Grind cashews and coconut and keep aside.
Kuruma
Heat oil and add cloves, cinnamon and onion. When onions are cooked add the tomatoes. Cook until tomatoes turn mushy. Next add masala 1 and saute for a few minutes.
Add soya chunks, snow peas and cashew paste and mix well. Next add 1.5 cups water, salt and turmeric.
Bring to a boil and simmer until the vegetables are cooked. Allow to cool and add yogurt. Mix well and garnish with cilantro. Serve with rice or rotis.

Quite a different kurma Vardhini, never tried gravies with snowpeas,interesting..
