		<description><![CDATA[I searched for hours for the perfect moist, and healthy muffin recipe and this definitely fit the bill. These muffins are have a lovely aroma in the oven,and wonderful taste when they come out. I made this recipe into mini muffins, but adjusted the cooking time and temp a bit. On my first test batch I mixed some crushed pineapple into the batter (in natural juice of course) to keep with the healthy integrity of the muffins, and sprinkled a tiny bit of coconut on each one(I also used coconut oil, if you haven&#039;t tried it in baking is a must have in the kitchen). They turned out fantastic! My second &quot;test&quot; batch I mixed in one overly ripe mushed up banana, I had to adjust the flour ratio a bit since banana can make the batter runny, I also added more crushed pineapple. Wowza these are going to be a go-to recipe, will definitely be  putting this into my recipe journal. These totally screamed summer in flavor with the additions of tropical fruit. Next time I&#039;ll try pineapple chunks. I cannot wait to try more of your wonderful recipes, keep up the AMAZING work:)]]></description>
