The week starts with another easy recipe using healthy broccoli. I recently started collecting Costco cookbooks, the one they give out the day after Thanksgiving. I was pleasantly surprised at the vegetarian recipes and how easy they are to adapt. The recipes are centered around the ingredients you find at Costco, but you can use similar ingredients with good results.
Garlic and broccoli is a winning combo. Adding breadcrumbs gives the dish a nice crunch and you cannot stop with one piece. We tossed this with pasta and loved the dish. Recipe adapted from Costco cookbook. Off to the recipe.
Broccoli Garlic Breadcrumb Fry
Healthy fry with broccoli, garlic and breadcrumbs.
Ingredients:
- broccoli - 4 cups - florets
- olive oil - 1 tbsp
- cumin seeds - 1/2 tsp (jeeragam)
- garlic - 5 cloves - minced
- breadcrumbs - 1/3 cup
- soy sauce - 1.5 tsp
- salt - to taste
- pepper - to taste
Instructions:
Steam broccoli and keep aside.
Heat oil and add cumin seeds and garlic and saute for a minute. Add soy sauce and bread crumbs and saute for about 5 - 6 minutes until the breadcrumbs turn crispy. Add salt, pepper, steamed broccoli and toss together.
Serve as a side to rice or over pasta.
