Carrot Payasam (Carrot Kheer)

I made this easy Indian dessert last month keeping “Sweet Luv” event in mind. Payasam is a simple dessert and is made during festivals and is also made to celebrate birthdays, anniversaries, etc. I made this payasam for one such occasion and totally loved the vibrant color of this payasam. Even though I am not a big fan of desserts, I could not resist this inviting bowl of payasam.
I had a few sips and the rest was promptly finished by K. The kids for some reason do not care much for Indian desserts and I have no clue why. Either way I am not complaining because Indian desserts have become a rare thing at home and as long as someone finishes it I am happy

Indian dessert with carrots.

Cook the carrots in milk and allow to cool. Blend to a paste. Heat ghee and fry cashews and keep aside. To the the same vessel, add the carrot paste and saute for 10 minutes.
Add about 1/4 cup water and sugar to the reduced carrot paste and stir till the sugar dissolves. Add the cashews and cardamom powder. Add milk and dilute to the needed consistency before serving.
2. Cooked carrots. Allow to cool.
3. Take in a blender.
4. Blend to a paste.
5. Heat ghee and fry cashews. Keep the cashews aside.
6. Add the carrot paste to the same vessel that has the ghee and saute for about 10 minutes on medium flame.
7. Paste ready for sugar.
8. Add 1/4 cup water and sugar. Stir until the sugar dissolves.
9. Sugar has dissolved.
10. Add the cashews and cardamom powder.
11. Add milk to dilute it to the required consistency before serving.
12. Kheer ready.
