Baked Sweet Potato Wedges

This is the first sweet potato recipe in the blog. I would have cooked sweet potato may be a handful of times in the past years and when K came home with a couple of sweet potatoes, I was stumped wondering what interesting thing I can make with these. I didn’t want anything mushy and settled with these fries from the Costco cookbook. I followed the oven temperature and time mentioned in the recipe and the first batch turned black. I kept watching like a hawk for this second batch and it turned out good.
I am still going to call these wedges and not fries because they were only a bit crisp on the outside. Nevertheless I am posting it since we enjoyed it and it is also quick to make. No harm in trying easy things right. There are a lot of recommendations for crispy fries all over the net and I am going to keep trying them to see what works for me. I will add a new post when I get the crispy fries of my dreams
. For now, let us enjoy these wedges. Off to the recipe from the Costco cookbook.

Baked sweet potato wedges that have a slight crunch.
Peel and slice the sweet potatoes into wedges. Coat with olive oil. Place the wedges over a greased baking sheet.
Mix brown sugar, salt and pepper and sprinkle this mixture over the wedges. Bake in a 450F preheated oven for 10 minutes. Flip the wedges over and bake for another 5 minutes.
2. Cut them into thick strips.
3. Coat with olive oil.
4. Take salt, pepper and brown sugar in a bowl.
5. Mix well.
6. Place the wedges on a greased baking sheet.
7. Sprinkle the sugar mixture over the wedges and bake in a 450F oven for 10 minutes.
8. After 10 minutes, flip the wedges over and bake for another 5 minutes.
9. Out of the oven.
