Eggless Chocolate Chip Cookies | Cooks Joy

I am not against using eggs, but when I posted a picture of the peanut butter cookie in facebook I had a few people ask for egg substitute. So, I decided to try out an eggless version of a cookie and it was a success that K could not differentiate between the ones made with egg and the ones without egg. I did try both versions just to compare.

The big difference was that the eggless ones spread out much more than the ones with egg, but it did not affect the taste or texture. My son had been asking me to make cookies for a while and he loved them. I also added a generous amount of chocolate chips since it was mainly for the kids.

With the substitution and the original recipe, I ended up making 3 batches of the cookie. A tiring day indeed and I have a ton of cookies lying around :) . Add this to the candy that is going to accumulate tomorrow for Halloween and we have a “very sweet” house. My job after Halloween would be to hide as much candy as possible and pack them with K to work. Just spreading the joy and I tend to do it a lot with sugary stuff :) . Savory stuff flies out in no time and there are hardly leftovers even if I make tubs of them. After hunting for the cookie recipe, I finally adapted the recipe on the Nestle chocolate chip cover. Off to the recipe.

Eggless Chocolate Chip Cookies

Tasty cookies loaded with chocolate chips.

Ingredients:

Instructions:

1. Mix the dry ingredients (all purpose flour, baking soda, baking powder and salt) in a bowl.
2. Take sugar, brown sugar, vanilla extract and butter in a bowl. Beat until creamy.
3. Add the flax meal + water mixture and beat well.
4. Beat the dry ingredients in gradually.
5. Add the chocolate chips and mix with a spatula.
6. Drop by tablespoonful (about 2 inches apart) onto ungreased baking sheet and bake in a preheated 375F oven for about 9 - 11 minutes.
7. Remove from the oven and allow to cool for a couple of minutes before moving to the wire racks to cool completely.


My Notes
1. If you are using egg, replace flax meal and baking powder with one egg.
2. The recipe yields chewy cookies.
3. I lined the baking sheet with parchment paper for easy cleanup.
