I must say that broccoli was not my favorite veggie a few years ago. But now I have developed an immense liking towards it that I prefer broccoli over my once-upon-a-time favorite veggie cauliflower. Luckily my son likes it too and I mostly combine it with his favorite pasta. This is one of my favorite ways to finish up the hugs bags of broccoli I buy from Costco.
You will find a version of the roasted broccoli here and today I decided to jazz it up with some Indian spices. There is really nothing much to the recipe and you can add all your favorite spices. You can have it as a snack or toss it with pasta for a healthy meal. I really wish that along with being yummy, the dish was photogenic too. I spent a whole bunch of time and after 77 pictures I called it a day . Off to the recipe.
Spicy Roasted Broccoli
Broccoli florets coated with spice powders and roasted in the oven.
Ingredients:
- broccoli - 8 cups - florets
- salt - 1/4 - 1/2 tsp
- chilly powder - 1/4 - 1/2 tsp
- cumin powder - 1 tsp
- chaat masala - 1/2 tsp
- turmeric - a pinch
- olive oil - 1 tbsp
Instructions:
Take broccoli florets in a bowl and add salt, chilly powder, cumin powder, chaat masala and turmeric. Mix well using hands. Add olive oil and toss to combine.
Transfer to a greased baking sheet and bake in a preheated 375F oven for 20 - 25 minutes stirring once in the middle.
Enjoy as a snack or add to pasta.

Straight out of the oven and almost a quarter of the broccoli went in my tummy as I was getting the pictures done .

I think so. You can thaw and proceed in the same way. Cooking time might need to be adjusted.
