Mango – Cucumber Salsa

Hard to believe that summer is coming to an end, but the good news is that the temperatures are finally cooling down from being in 3 digits. I made this salsa a month ago when I had some ripe mangoes from the Indian store. Of course cucumbers are in season and they made a perfect combination. This salsa was a nice variation to the usual tomato salsa we usually have and it tasted great with tortilla chips.
The recipe is very simple and involves just chopping and tossing the ingredients together. You can also have this like a salad or as a topping for burritos. Off to the recipe. Inspired by the salsa recipe in “In the Kitchen – Cooking the Costco Way”.

Salsa with ripe mango, cucumber, onions, cilantro and more.
Take mango, cucumber, onion, jalapeno, cilantro, lemon juice and salt in a bowl.
Toss it all together and serve with tortilla chips.
