When I started blogging, I asked my sister if she had anything specific for me to post and she wanted me to post ice cream. I told her that I do not have an ice cream maker and did not plan on getting one due to the lack of space in the cabinets. Fast forward a year and when I saw the recipe in JeyashrisKitchen that does not need an ice cream maker, I knew I had to make it. It worked out perfectly since strawberries are in season now. The ice cream tasted delicious and it was a breeze to make. I invited my friends over and they loved it too. It was rich, creamy and had a texture to it rather than the milky version I am used to.
The ice cream was done and of course it tasted great. What comes next is the tedious part of taking a picture of the ice cream that starts melting in a few seconds. Phew .. I was exhausted running from the freezer to the table and back to the freezer to dump the ice cream back in the bowl and start over. Added to that I have hardly scooped ice cream out since I am not a big fan of it and the first session was learning how to use the scoop . So, two sessions at varying times and still not satisfied with the result. My friend Lacey, who stopped by brought me some cute heart shaped silicone muffin cups and I decided to use those in the next session. I clicked and showed it to my son and he said that it looked like a snowman. Hmm .. so much for the work . Finally, I decided to shoot using cones and I wanted someone to model and the dress that my 4 year old was wearing seemed to be a perfect backdrop except that I knew it was going to be extremely difficult to get her to stand still.
Still, I was daring enough to go ahead with the idea and got things going with an empty cone in the hand. For the first few seconds I had to explain to her that she was actually not going to be in the picture and that she did not have to smile or pose. I am sure she was confused . She was very excited when I told her we are going to fill up the cone and that we have to act fast before the ice cream melts. So we ran out with the filled cone and of course like any 4 year old she cannot keep still for even a second !!. She had to either move the cone or move her body. And, a few seconds later she was tired and decided to sit down with a “are we done” look. I am not sure if she was tired or if she just wanted to eat the ice cream . So, we try some more shots while sitting down and the ice cream is already melting at this point and we were done. The whole drama lasted for may be a couple of minutes and I was able to find a couple of decent pictures from the whole lot. Phew .. mission accomplished, thanks to my little model and the picture is going to be my personal favorite forever . Off to the recipe. Recipe from JeyashrisKitchen.

Melting snowman .
Strawberry Ice Cream (Eggless)
Yummy strawberry ice cream. (No ice cream maker needed)
Ingredients:
- strawberries - 5 cups - chopped (About 1.5 pounds of whole strawberries and I got about 3 cups of puree)
- heavy cream - 1 1/4 cups
- condensed milk - 1 1/4 cups - 14 oz can
- evaporated milk - 1/2 cup
- sugar - 3 tbsp (adjust to taste)
- strawberries - 1/2 cup (chopped)
Instructions:
Puree the strawberries. To the puree, add heavy cream, condensed milk and evaporated milk.
Blend well using a hand blender. Taste and add the needed sugar. Blend again.
Place mixture in freezer for an hour and blend again. Repeat this freezing for an hour and blending for 2 more times.
Next add the chopped strawberries and freeze for 8 hours or overnight.
My Notes
- Do not skip the freeze and blend step. It has to be done 3 times or more.
- The ice cream had a nice texture that was slightly icy rather than being completely milky. We loved it.

Awesome clicks. I can totally understand the frustration in taking the picture of melting ice cream and that too with a 4 year old model. At least your daughter didn’t start nibbling on the ice cream (check my 4 year old’s ice cream picture on my blog).
