As mentioned in my VFAM – Zucchini post, my usage of zucchini seems to be very limited. This poriyal is a standard one that I use with most vegetables and for the first time I tried it with zucchini. It tasted great and another recipe added to the collection featuring zucchini. Since zucchini is a vegetable that can be eaten raw, you can decide on how much you want the vegetable to be cooked. Remember that it turns mushy too. Off to the recipe.
Zucchini Poriyal (Stir Fry)

Zucchini sauteed with onions and tomatoes.
Ingredients
- 1 tsp oil
- 1/4 tsp mustard seeds
- 1 cup onions (chopped)
- 1 tsp ginger (paste)
- 1.5 cups tomatoes (chopped)
- 3 cups zucchini (diced)
- 1/2 tsp chilly powder
- 1/2 tsp coriander powder
- salt (to taste)
Instructions
- Heat oil and splutter mustard seeds. Add onions and ginger paste. Saute until onions are cooked.
- Add tomatoes and saute until tomatoes turn mushy.
- Add zucchini, chilly powder, coriander powder and salt.
- Cook zucchini to the desired level and turn off the stove.
