Carrot Halwa and Welcome to CooksJoy

The moment I had been waiting for over the past several months is finally here :) . Yes, K and I had been working on the new website for quite sometime. It was certainly not easy as I had visioned it and we had to dump and start over a few times.  There were also a few times when I was not sure of what we were getting into since the path was rough, but I am happy with the way things turned out finally.

I thank all my friends and family for testing the new blog and letting me know their feedback. Thanks AnamikaSangee  and Priya for taking a look at the site and for giving me feedback. I have to mention my dear buddy Shailaja who has been very patiently listening to my site updates ever since we started building the site and for also beta testing each website we created and of course for also listening to each and every name I came up with for the site :) .

Last, but not least this website would not have been possible without my husband since he was the one who encouraged me to start blogging in the first place, pushed me to registering the domain, patiently listened to my never ending demands for the website, designed the website and logo and much more.

For the welcome post I made Carrot Halwa a few months ago since we were ready to launch in February and then decided to redesign it. Finally, carrot halwa sees the light of day :) .

I am really excited with the move and happy to see you all here. Since this is a new venture for both of us, please feel free to drop in your comments and/or suggestions.


Ingredients
3 cups grated carrot (4 carrots)
1/2 cup sugar
2 tbsp ghee
2 cardamom
1 cup fat free milk
Cashew and raisin roasted in ghee

Method

Roast the cashews and raisins in a tsp of ghee.

See how the raisins have plumped up. Remove and keep aside.

To the same vessel add grated carrots. Saute for a couple of minutes.

Add milk and let the carrots cook.

Carrots are cooked.

Add sugar. Mix.

Add cardamom.

Add ghee. Keep stirring and wait till the mixture starts to thicken.

Add the roasted raisins and nuts. Keep stirring until the mixture comes together.

When the mixture is dry and moves freely turn the stove off.

Carrot halwa ready.
