Asparagus Rice

Day 1 of the blogging marathon and this time the theme is “cook by alphabets”. I was initially going to start with ‘B’ and go until ‘H’, but then I saw this in my draft and I decided to go with ‘A’. I picked this theme almost instantly because I liked the idea of having different dishes each day. It was exciting to pick the items and the past few weekends have been fun.
Asparagus has a lot of health benefits and I have mostly made only stir fry with it. For a change I decided to try out the rice and we loved it. Weeknights are normally crazy and I mostly stick with one pot meals or rice dishes like this. My son loved it too and that is a plus for me. Check out the recipe of Asparagus-Tofu fry.

Ingredients
Method
Cook the rice in the ratio of 1:2 for rice:water and allow to cool.
Heat oil and add cumin seeds. Saute for a minute. Then add the peanuts and toast for a minute or so.
Add onions and ginger paste. Saute until onions are done.
Onions are cooked.
Add chilly powder, salt, turmeric and coriander powder.
Mix it all and allow the asparagus to cook. It hardly takes time.
When the asparagus is cooked, add the cooked and cooled rice.
Mix gently.
