Today is a healthy and easy recipe. I recently won a giveaway by Amibikaskitchen and received the wonderful book “Anjum’s New Indian”. Flipping through the pages of the book, the first recipe that caught my attention was this spinach and rice dumpling since we love spinach. Added to that I had tons of fresh spinach waiting to be used in the fridge.
We paired the dumplings with some mango pickle the first day and then with kuzhambu for lunch the next day. The book has tons of interesting recipes to try and I am hoping to get to them slowly

Another look.
Ingredients
2.5 cups chopped spinach
1.5 cups cooked rice
3/4 cup besan (Kadala maavu)
2 tsp cumin seeds (Jeeragam)
Asafoetida
1/2 tsp chilly powder
Salt to taste
2 tsp oil
3/4 tsp ginger paste
3/4 tsp garlic paste
Method
Take cooked rice and spinach in a bowl.
Add besan.
Add cumin seeds and asafoetida.
Add chilly powder.
Add salt.
Add ginger and garlic paste.
Add oil.
Mix it all together.
Form small balls and place in a vessel and steam for 10 – 15 minutes similar to idli.
Steamed dumplings.
Ready for a snack or light dinner?
